Lardoons and Vegetable Puree with Nut Butter and Tart Salad

Pork is not usually my favorite thing. And ‘lardoons’ sound really gross. It was a bit of work, but you know what? It was awesome. The meat was tender and juicy and didn’t have an ounce of fat on it, and the vegetables tasted amazing with homemade nut butter. It was not a combination I would have thought about without this book!

Was a hit all around, and you definitely couldn’t even tell it was pork. Just tasted like deliciousness.
